Mocha Chocolate Chunk Cookie Bars

Mocha Chocolate Chunk Brownies Cut them small if you will want to, my family refused to have such limits on their portions.  I divided the first batch into 16 pieces.  The second batch was cut into 12.  They much preferred the larger brownies.  These were deemed blog worthy by both family and non-vegan friends.  :)  Definitely, try it with the vegan chocolate chunks not mini chips. Doughnuts for School

The PTA was having a donuts with Dad day. This required that I have doughnuts to send with them so they wouldn't be subjected to some horrible store bought, preservative laden, sweets. So I pulled out my mini bundt tin and got to work. Turned out it was dads eating doughnuts in the school library and most of the kids having none. :( Luckily for my kids, their doughnuts were in their lunchboxes. They appreciated the doughnuts very much. It was a fairly simple recipe, infinitely adaptable, and truly delicious. Next time, I might try making the doughnuts coconut or maple flavored. Pad Thai Kung Pao with Cashews Both of these wonderfully delicious meals were served at the Loving Hut restaurant located in Addison, Texas. My husband has missed Pad Thai more than almost any other food after switching to the vegan diet.  He told me this Pad Thai was better than any Pad Thai he ever ate!!  My Kung Pao was excellent and was a large enough serving to take half home for lunch the next day.  The Spring Rolls were the best we have ever tasted.  That is, of course, why they were already eaten before I pulled out my phone to take pictures of the food.  I highly recommend you stop by the next time you are in the area.  You won't regret it.  

Pizza Lounge in Dallas

Vegan Sofa King at Pizza Lounge We had the opportunity to try a vegan pizza night at Pizza Lounge . We were lucky enough to choose Sunday evening as the time to go. On this particular Sunday, they had live music. The music was played by a great group of guys known as The Poor Kings . We ordered the Un-humus appetizer and a vegan version of PL's Sofa King. Check out the menu for the details on all the pizzas they can make vegan for you.  The un-humus could use more salt, garlic, and extra virgin olive oil, but the flat bread was awesome.  As for the pizza, they tossed on every one of their vegan meat substitutes with a decent sauce and excellent crust.  I would have like some more vegetables and an addition of olives, but it was a good pizza, and a great funky atmosphere to go with the live band.  I would highly recommend you try it out if you are ever in the area.  If it is Sunday night and The Poor Kings are playing, I might just be there. ;)

Chili-Cheezy Popcorn Seasoning

Chili-Cheezy Popcorn 2 Tablespoons Nutritional Yeast 1/2 teaspoon Chili Powder 1/2 teaspoon Onion Powder 1/2 teaspoon Garlic Powder 1/4 teaspoon Cumin 1 teaspoon salt Mix seasonings thoroughly and sprinkle over freshly popped popcorn.  Enjoy!  I am planning to find a vegan friendly Mexican restaurant and see if they will sprinkle my seasoning over their freshly made tortilla chips. :)  This also makes a great seasoning for rice and beans.
